What's the right lube to use for the speedometer cable? Light machine oil, or is there something that would work better?

I would say that ought to do the trick, if you need any at all.

When I had my cj calibrated for a competition the tech dude said vaseline was the shizzle for speedo cables. I would imagine light oil or anything relatively thin would work fine.

for over 25 years i used white lithium grease you buy in the auto parts places, pull out the brass inside cable, put the tubeof grease in the outside housing of the cable and squeeze all you can inside the cable then take the inside cable and lube it up good about 6" at a time and push it back insde the outer cable housing, keep doin this till its all back inside. it will be good for about 10 yrs or 100,000 miles. best way to tell if your cable needs lube is your speedo or tach pointer will bounce.
