Do you have either version right now? Is money a concern?
A 350 crate engine is about the best value you can get. Call up your dealer and "pooof" you have a new engine with a warranty.
a 383 needs to be built or comes as an expensive crate. Either way, it will cost more. Yes, it makes more torque and hp. Power cost money, how much can you afford?
They are both well suited for this truck and fairly simple to install. It really comes down to what you want and how much you want to spend.

I'd go w/the 350 just for longetivity and parts availability....
w/the original axles, you should have enough torque....

383 will require the externally balanced flywheel and harmonic balancer if I remember right. I have the 350 and the truck doesn't need the extra power with the stock gearing. I don't do any crazy wheeling though.
